Pepper Pot Recipe
Pepper pot is usually a highly seasoned soup made with meat and
vegetables. There are quite a few varieties of pepperpot
recipes out there ranging from ones that include tripe to those made
by Campbell's Soup quite a few years ago. Even with all of the
variations, the main ways of how to make pepper pot stay the same in
almost every recipe.
This particular pepper pot recipe variation uses ground beef and
fish and it is NOT a soup. It's made with meat and vegetables
in a casserole dish. It's a great dish to serve over rice and
with a salad.
Pepper Pot Recipe Ingredients
• 1 pound ground beef or ground round
• 2 pounds of haddock, tilapia or other fresh fish cut into 2 inch
pieces
• 1/2 cup sliced scallions
• 1 large onion, finely chopped
• 1 cup thinly sliced mushroom caps
• 4 medium carrots thinly sliced
• 1/2 cup diced celery
• 1.5 teaspoon minced garlic
• 1.5 teaspoon sugar
• 1/4 cup soy sauce
• 1.5 teaspoon salt
• 1 teaspoon ground pepper
• 1/4 teaspoon ground ginger
• 3/4 cup water
Pepper Pot Recipe Directions
Set oven to 350 degrees. In a large mixing
bowl, combine the ground beef, scallions, garlic, sugar and 2
tablespoons of the soy sauce. Mix until all ingredients are
well incorporated.
Place half of the ground beef mix in a 3 quart
baking dish. Spread evenly in the bottom of the dish.
Spread half of the fish on top of the beef then top with half of the
onions, half of the mushrooms and half each of the carrots and
celery.
In a small bowl, combine salt, pepper and ginger.
Half of this should be sprinkled over the vegetables in the
casserole dish.
Place another layer of beef mixture on top of the
vegetables and follow with another layer of fish then vegetables.
Sprinkle the remaining salt, pepper and ginger over the top of the
vegetables.
Combine the water and remaining soy sauce.
Pour the soy sauce over the pepper pot evenly.
Cover the baking dish with a lid or aluminum foil
during baking. Bake approximately 1 hour. The fish
should be flaky and the vegetables will be tender when the pepper
pot is done.
