Healthy Meatloaf Recipe
I love to try new recipes, but I also want any
new meatloaf recipe I try to be healthy AND taste good. This
healthy meatloaf recipe is a winner at my house. We like to
have it on Sunday evenings so my husband can have leftovers for
lunch on Monday. I've been told that it makes his Mondays much
nicer when he has a good lunch to look forward to.
This recipe and other healthy meatloaf recipes
are also wonderful if split into smaller meatloaves, cooked and
frozen for later use. If you are planning to freeze this
meatloaf, leave the potatoes off in the final step. Potatoes
do not freeze well at all. Just add those when you defrost and
warm the meatloaf.
Another note on the potatoes - the instant
potatoes work really well for this recipe but make sure you use less
liquid than is called for in the directions so they will be thick
enough to cover the meatloaf.
Healthy Meatloaf Recipe Ingredients
• 1 pound ground beef
• 1 cup ricotta cheese
• 3 large eggs
• 3 Tablespoons vegetable or chicken broth
• 1 Tablespoon Worcestershire sauce
• 1/3 cup + 2 teaspoons 1% milk
• 1/2 cup + 1Tablespoon dried bread crumbs
• 1/3 cup finely chopped celery
• 1/3 cup parsley, chopped
• 2 Tablespoons minced shallots
• 1/2 Teaspoon salt
• 1/8 Teaspoon ground black pepper
• 1 cup cooked potatoes, mashed
• 2 Tablespoons butter
• 2 Tablespoons Parmesan cheese, grated
Healthy Meatloaf Recipe Directions
Your oven needs to be preheated to 375 degrees.
In a large mixing bowl, combine ground beef,
ricotta cheese, eggs, bread crumbs, celery, parsley, broth,
shallots, salt, and pepper. Mix with clean hands until all
ingredients are evenly dispersed. Shape into a loaf and place
in a shallow roasting pan.
Bake for 40 minutes or until meat and eggs are
thoroughly cooked.
While the meatloaf is cooking, combine potatoes,
milk, butter, and parmesan cheese. Use an electric mixer to
beat until smooth.
When the meatloaf comes out of the oven, increase
oven temperature to 425 degrees and spread the potato mixture over
the top of the meatloaf. Return to oven and bake until the
potatoes are golden brown. This usually takes approximately 15
minutes.
